Five recipes to make on Three Kings Day
–Ham and cheese pâté. To make this delicious recipe you will need 125 grams of ham, 125 grams of Serrano ham, 4 cheeses and 50 grams of cream. First crush the two types of ham and reserve. Take a casserole and put the cream in a bain-marie along with the 4 cheeses. Once you get a kind of cream, add the ham and stir well. Add the pâté to a bowl and let cool.
–Green asparagus rolls. To make this simple recipe you will need 12 wild asparagus, 12 slices of smoked bacon, salt and very cold water. Put a pot with water and salt to boil, add the asparagus and when 15 seconds pass you take them out and add them to a bowl with very cold water. Leave them for a few minutes and then roll them with the slices of bacon. Put the rolls in a pan and fry until the bacon is crispy.
–Corn fritters. If you want to make an easy and delicious starter you will need half a cup of flour along with 250 grams of corn, half a glass of milk, 1 egg, 250 grams of butter, half a cup of chopped chives and a cup of corn. First mix the flour with the 250 grams of corn in a bowl. In another bowl mix the milk along with the egg and butter. Mix with the first bowl and add the cup of corn and chopped chives. Go frying the fritters in plenty of hot oil and serve with a little honey.
–Monkfish with saffron cream. If you want to make this fish dish you will need 9 slices of monkfish, a kilo of clams, an onion, a few strands of saffron, 250 ml of cream, 50 ml of milk, flour, salt and black pepper. Poach an onion in a pan for a few minutes. Then add the cream along with the milk and stir. Beat it until you get a cream. Let it boil, add the saffron and set aside. Pass the monkfish slices through flour and fry in oil. Reservation. To finish, cook the clams until they open. Add the monkfish along with the sauce and let cook for about 5 minutes. Salt and pepper to taste and serve immediately.
–Stuffed mushrooms. You need 2 mushrooms per person, half an onion, 4 slices of bacon, cream and grated cheese. First clean the mushrooms well and set aside. Sauté the chopped onion in a little oil and then add the cut bacon. Add the tails of the mushrooms cut into cubes and sauté everything for 5 minutes. Add the cream and let reduce. Stuff the mushrooms and sprinkle with grated cheese. Put in the oven for 15 minutes at about 200 degrees.
